
Serves 4-6
- 1 jar of Spinelli’s Classic Marinara
- 1 large cucumber peeled, seeded and diced small
- 1 medium roasted red bell pepper, diced small
- 1 medium bell pepper, diced small
- ¼ bunch fresh Italian parsley chopped
- ¼ cup fresh mint de-stemmed and chopped
- 1/3 cup white balsamic vinegar
- 1/4 cup olive oil
- ¼ tsp of Black pepper 1 teaspoon salt
- 1/8 teaspoon hot pepper sauce (such as Tabasco)
Preparation:
Combine all ingredients into a large bowl. Take half of ingredients and pour into a mixer and mix until you have an even thin consistency. Add back to the other half of ingredients, combine well. Add more salt and pepper to taste. Serve chilled and enjoy!
